Welcome! This page is to help other people who need good, low sodium foods to eat. I was at my daughter's nephrology appointment this afternoon and her doctor was surprised that we weren't having an issue keeping her daily sodium intake under 2000mg per day. I'd like to use this page to post tips and recipes that have worked for us. Everyone in the house has taken to eating the same as she does.
But let me back up - my 15 year old daughter has Nephrotic Syndrome - Minimal Change Disorder (MCD). 4 years ago, we took her to the pediatrician for a well child checkup. They did a finger prick and checked her cholesterol. It came back around 500. They said it was most likely a malfunction of the machine and to bring her back for a first am (before eating in the morning). We asked about the fact that she often woke up looking like the image below and were told it was most likely an allergy to dander. They recommended we replace all of her sheets and get her an allergen pillow.
My husband, her dad, was off work that Friday, so he took her back to the doctor for the first am cholesterol test. This time the test came back at 600 and a very observant nurse (an angel in disguise!), put them in a room. A new pediatrician came in and immediately called her friend, Dr. Basema Dibas at ECU Vidant Pediatric Nephrology. They admitted her to Vidant Medical Center in Greenville, NC on May 23, 2014 weighing in at 136 lbs.
We were visited by a dietitian the Friday before we went home. She came in at 4:30 (again on a FRIDAY!) and spent no more than 30 minutes in the room with us. She told us to stay away from processed foods and fast food, no sodas, and stop using salt (no DUH! LOL), Then she walked out and we never saw her again - no appointment to follow up, no documentation to review, nothing.
After being discharged, my husband and I went to the grocery store and spent over 2 hours looking for foods we could make for our girl. We found that whole milk has lower sodium than low fat, lactaid, and almond milk. That week my mother ordered us "The No-Salt, Lowest-Sodium Cookbook", by Donald A. Gazzaniga. We started off sticking to these recipes and have since spent less time in the grocery store, and found some great tips and recipes that I'd love to pass on to you!

After a very stressful week of water reduction, dehydration (even when you body retains water, you can be dehydrated if that water is removed too fast!), kidney biopsy, lots of questions (possible heavy metal exposure, family history, etc), a CAT scan, a Children's Miracle Network broadcast, etc, she was discharged at a meager 96 lbs!
